- Sift the icing sugar into a bowl and stir in the water until you have a smooth, runny paste that coats the back of a spoon. If you’re making lemon icing, add a squeeze of lemon juice. Make the icing by mixing together the water and icing sugar until you have an icing like consistency.
- Dip the Madeleines into the icing at an angle, then sprinkle with your favourite decorations.
- Pop them on some greaseproof paper to set before serving.
