CHEESE AND VEGETABLE QUICHE

MAKES A 28CM (11 INCH) DIAMETER QUICHE

FOR THE FILLING:

Courgettes, tomatoes, red/yellow peppers, and any other assorted vegetables, one small onion finely chopped, 3 large eggs, 200ml (7 fl oz) tub of fresh single cream or milk, 1-2 tbsp parmesan cheese, 150g (6oz) grated cheddar cheese, salt and freshly ground black pepper.

  1. Follow the recipe and method for savoury pastry shown on the right. Use the pastry to line your an dish. Prick the case with a fork and bake blind in the oven for 8-10 minutes. Remove the pastry case from the oven.
  2. To make the filling, beat together eggs, cream, salt and pepper. Add in the grated cheese, parmesan, chopped onion and any other vegetables.
  3. Pour into the prepared pastry case and bake in the centre of the oven for 25-35 minutes until golden brown and the filling has set firm.
  4. Remove from the oven and enjoy hot or cold.

SWEET OR SAVOURY SHORTCRUST PASTRY

YOU WILL NEED TO ADD:

90g (3.5oz) butter/margarine, 60ml (4 tbsp) cold water. For sweet pastry add 3 tbsps caster sugar to the dry pastry mix before using.

  1. Preheat the oven to 190°C / 170°C (fan) / 375°F / Gas Mark 5.
  2. Cube the butter/margarine, rub together with the Pastry Mix.
  3. Add the water gradually and mix until the pastry can be pressed together.
  4. Roll out the pastry. To prevent sticking, dust the surface with gluten free our – or roll out between two pieces of cling film.
  5. Use to line your pie dish or tart cases. For a golden colour, brush with milk.
  6. Bake in the centre of the oven for approx 20-30 minutes until pastry is golden brown.
